On a cutting board, with a sharp knife, cut the chicken giblets into large bite-size pieces.
Set a large non-stick frying pan over high heat until very hot, then add the olive oil.
Add the chicken giblets and sauté until they are browned and cooked through, seasoning with salt and freshly ground pepper.
Add the lemon zest, deglaze with the white wine, and continue cooking until they are glazed with the remaining sauce.
When ready, add the fresh oregano, give everything one last stir, and serve immediately.
