Spread the chicken nuggets on a parchment-lined baking tray and bake at 180 °C for 20 minutes.
Make the croutons
1. Put the bread cubes in a bowl.
2. Sprinkle with a little olive oil, garlic powder and oregano; toss to coat.
3. Toast in a skillet over medium heat, tossing frequently until crisp on all sides.
Make the dressing
Put all the dressing ingredients in a small bowl and mix with a spoon.
Make the salad
In a deep bowl place the lettuce, the chicken nuggets, the croutons and the dressing; toss and serve.
Tip: With any leftover salad, make great sandwiches—tuck it into whatever bread you like.
